Meat meat meat!

One of our vendors who hunts just dropped by.

He made good on an offer he made a few months age: Game.

I now have a package of Wild Duck breast, Elk summer sausage, and a Deer loin. I can’t wait to try them! Does anyone have recipes or advice for the loin or the duck?

  1. marinate the loin in your favorite marinade, slice it into medalions and grill or pan sear….y-u-m.

    I like teriyaki, or yoshida’s original (it’s like a teriyaki)

    It also makes a GREAT stew. Just throw in what you want, turn on the crock pot, and let it cook.

    Make sure the meat has been soaked already. if not, put it in a tub or salted ice water overnight to get the game taste out. Though I am sure he did it already.

  2. oh, and…sorry lol. I’d Grill the duck breast. lightly season it then when it’s mostly done slather it with a orange glaze, or sweet bbq sauce. I actually made a mixure of the two, a lightly spicy, sweet bbq sauce and pretty standard orange glaze….it was great.

  3. Funny fact: Mr. Yoshida actually lives in our town, out by the Sandy River. He bought a pub called “Hagar’s” and re-developed it into a fancy dinnerplace called “Riverfront.” Haven’t tried it yet.

    The meat is in butcher wrap (professionally processed) so I’m sure all the necessary steps have been taken.

    boy that stuff is NASTY if you don’t.

  5. Oh, and in case you didn’t know (though I am sure you do) even though it is breast, all duck meat is “dark meat”
