Last night I made sweet and sour veggies and I was somewhat pleased on how it came out. I wasn’t really measuring ingredients so I don’t know the exact measurements. Below is a summary of ingredients though. I plan on refining this one out because for a 1st attempt, it was quite tasty.
The sauce:
Rice Wine Vinegar
Rice Cooking Wine
Ketchup (need a ‘cooler’ product that has the same flavour profile, perhaps chili sauce?)
Garlic Chili sauce
Sriracha
Brown Sugar
Pineapple Juice
Sweet Chili sauce
I think I can likely remove some ingredients and not affect the flavour.
For the veggies/fruits I used:
Bell Pepper
Onion
Carrot
Water Chestnut
Bamboo Shoot
Mushroom
Fresh Pineapple
I was too lazy to add the planned fried Tofu.
I’m having it for lunch today. Yum.
Instead of ketchup I would try some kind of spiced tomato paste, not chili sauce.
I have been thinking of posting recipes, but I’d like to do it in an interesting way. Seeing you put this up… Maybe I could do it in a correspondent way, like a roman a lettres. Like people who play a chess game over the mail, we could exchange recipes and challenge the other to improve it?

I am quite keen to get this one to SHINE. I want a perfectly balanced sauce with sweetness and heat which is then balanced with a good tang of sour.
I think I need to use Tamarind and tomato paste.
Who should start?
I will start–I can’t start right now, but sometime next week should work. I would like to start with something relatively simple as a test case; not to many ingredients and techniques. Maybe a soup or sauce?

When I had it today, the sweet really came out, much more than last night. Maybe it was the pineapple.
I am going to kidnap you and make you my man-cooking slave, complete with nudity and see-through apron.
On second thought I had better kidnap the wife and dog too. The three of us will sit in the hot tub sipping rum drinks and staring at your butt while you cook us dinner. =)
