I’ve been daydreaming over IM with about fall cooking and such and now I want to spend the weekend in the kitchen, puttering about and producing mounds of fall foods like:

Mushroom Pasties
Pumpkin-Ginger-Carrot Curry Soup
Pumpkin Bread/Muffins/Cheesecake
Hearty Hearth Breads

Etc.

Fall is here and I’m in the nesting mood.

  2. My Pumpkin Chocolate Chip Cheesecake does kick some major ass, I have to admit (even if it is playing the braggart).

  3. Most Important bit is to have a circular cake pan that you can immerse in a water bath (in a 13×9 casserolle dish).

    4 packs cream cheese
    2 cups sugar
    4 eggs
    1 cup pumpkin
    pumpkin pie spice to taste ( 2parts cinnamon, 1 part allspice, 1 part powdered ginger, 1 part nutmeg)
    Chocolate Chips

    Let the cream cheese come to room temp – it needs to be smooth. Mix it with the sugar, then the pumpkin. add the spice and eggs. If the batter appears too runny, add 2 tablespoons flour until the consistency is a little thicker than cake batter.

    Stir in as many chocolate chips as you would like (if the batter is too runny, they will sink to the bottom – aesthetically unpleasing, but still delicious).

    You should have made a graham cracker crust at the bottom of your cheesecake pan (I use 1 packaage of chocolate graham crackers and half a stick of butter or so).

    Pour in the batter and tap to release all air bubbles.

    Put the pan in the water bath in a 450° oven for 10 minutes
    bring the temp down to 250 WITHOUT opening oven, cook for 40 minutes.
    turn the oven off and leave the cheesecake inside untouched for another 15 or so.

    That’s about it off the top of my head.

    2) When you say ‘mushroom pasties’ it makes me think of a stripper with fungus on her teats.
